Ingredients
For the Ribs
2 racks pork spare ribs or baby back ribs
2 tbsp olive oil
2 tbsp brown sugar
1 tbsp paprika
1 tbsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
½ tsp cayenne (optional)
For the Peanut Butter BBQ Glaze
¾ cup creamy peanut butter (no added sugar preferred)
½ cup soy sauce
⅓ cup brown sugar
¼ cup honey
2 tbsp apple cider vinegar
2 tbsp ketchup
2 cloves garlic, minced
1 tbsp grated fresh ginger
1–2 tsp chili paste or hot sauce (to taste)
¼ cup warm water (to thin as needed)
Step-by-Step Instructions
1. Prep the Ribs
Remove membrane from the back of the ribs.
Rub ribs with olive oil.
Combine dry spices and coat ribs evenly.
Wrap and refrigerate at least 2 hours (overnight preferred).
2. Smoke Low & Slow
Preheat smoker or oven to 250°F.
Smoke ribs 2.5–3 hours, using apple or hickory wood if smoking.
Ribs should be tender but not falling apart.
3. Make the Peanut Butter Glaze
In a saucepan over low heat, combine all glaze ingredients.
Whisk until smooth and glossy.
Adjust thickness with warm water.
Taste and balance sweet, salty, and heat.
4. Glaze & Finish
Brush ribs generously with peanut butter glaze.
Return ribs to smoker or oven uncovered for 30–45 minutes.
Increase heat to 300°F for the final 10 minutes to caramelize.
