Ingredients

For the Ribs

  • 2 racks pork spare ribs or baby back ribs

  • 2 tbsp olive oil

  • 2 tbsp brown sugar

  • 1 tbsp paprika

  • 1 tbsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • 1 tsp salt

  • ½ tsp cayenne (optional)

For the Peanut Butter BBQ Glaze

  • ¾ cup creamy peanut butter (no added sugar preferred)

  • ½ cup soy sauce

  • ⅓ cup brown sugar

  • ¼ cup honey

  • 2 tbsp apple cider vinegar

  • 2 tbsp ketchup

  • 2 cloves garlic, minced

  • 1 tbsp grated fresh ginger

  • 1–2 tsp chili paste or hot sauce (to taste)

  • ¼ cup warm water (to thin as needed)

Step-by-Step Instructions

1. Prep the Ribs

  • Remove membrane from the back of the ribs.

  • Rub ribs with olive oil.

  • Combine dry spices and coat ribs evenly.

  • Wrap and refrigerate at least 2 hours (overnight preferred).

2. Smoke Low & Slow

  • Preheat smoker or oven to 250°F.

  • Smoke ribs 2.5–3 hours, using apple or hickory wood if smoking.

  • Ribs should be tender but not falling apart.

3. Make the Peanut Butter Glaze

  • In a saucepan over low heat, combine all glaze ingredients.

  • Whisk until smooth and glossy.

  • Adjust thickness with warm water.

  • Taste and balance sweet, salty, and heat.

4. Glaze & Finish

  • Brush ribs generously with peanut butter glaze.

  • Return ribs to smoker or oven uncovered for 30–45 minutes.

  • Increase heat to 300°F for the final 10 minutes to caramelize.
